Carmen's career in tax consultancy means she has the administrative skills needed to keep the others in order and help the co-operative register as a business. Carmen also finds time to produce jellies, jams and chutneys using sometimes unusual, but always gorgeous combinations of local fruit. Each of Carmen's batches - made on a one jam kettle scale - is absolutely unique. Her latest local jellies and jams include cherry plum jelly, strawberry and raspberry jam (using lovely local fruit from Edgebank Organics) and mustard fruits.
